Plantible Foods owes more than $38,000 in unpaid property tax according to a lawsuit filed in 51st District Court on Thursday, July 3, 2025 by the local taxing jurisdictions. The company began operations in Schleicher County in 2022 when they started growing lemna or “duckweed,” a protein-rich plant, in shallow ponds of water at their facility some five miles south of Eldorado on U.S. 277.
